Peas in their pods with chunks of chamois meat
400 gr small chunks of chamois meat
200 gr fresh peas
200 gr soft Stracchino cheese
grated stale bread (flavoured with marjoram and lemon zest) to taste
salt and pepper to taste
extra virgin olive oil to taste
Season the chamois meat with the flavoured bread, salt and pepper; place the meat on a roasting pan covered with parchment paper and roast it in the oven at 180°C for 14 minutes.
Remove the peas from their pods, blanch the pods in boiling water for a few minutes, drain, let them cool and season with salt, pepper and olive oil.
Stuff the pods with Stracchino cheese and fresh peas.
Rub some Stracchino cheese on a serving plate and lay down the stuffed pods and the hot chunks of meat on it.
