Ingredients

  • G 300 fresh wild boar sausage
  • G 100 bacon
  • G 30 chopped shallot
  • G 50 carrots cut into cubes
  • G 50 celery cut into cubes
  • G 30 ripe tomatoes cut into cubes
  • G 50 washed spinach
  • G 30 frozen peas
  • G 50 potatoes cut into cubes
  • G 20 dried black truffle
  • Extra virgin olive oil to taste
  • Salt to taste
  • Black pepper to taste

Preparation

  • Heat the extra virgin olive oil in a pan, add the chopped shallot and then all the vegetables except spinach and tomatoes. Cook for 10 minutes.
  • Add the tomato cubes and the spinach; season with salt and pepper.
  • Roast the sausage cut into cubes and the bacon (both sides) into a non-stick frying pan.
  • Place the minestrone soup with the roasted sausage and bacon on a serving dish. Garnish with dried black truffle to ensure crunchiness.
