WILD BOAR MEAT ROLL WITH “BROCCOLETTI”

Ingredients

  • N 4 wild boar slices 100g each
  • G 200 ground wild boar
  • G 50 black olives
  • N 1 anchovy
  • G 4 capers
  • G 10 breadcrumbs
  • G 30 fresh cream
  • G 200 fresh ricotta
  • G 150 Collesi blonde beer
  • G 200 broccoletti
  • Salt to taste
  • Black pepper to taste
  • Extra virgin olive oil to taste

Preparation

  • Pound the slices of wild boar meat.
  • Season the ground meat with olives, capers, anchovy, breadcrumbs, fresh cream , salt and pepper.
  • Spread the mixture over each slice and roll them up.
  • Sear the meat rolls on all sides in a non-stick frying pan without fats. Add the beer, cover and  cook  slowly for about 7/8 minutes. Add salt and pepper to taste.
  • Blanch the broccoletti for few seconds, drain and cool. Season with salt, pepper and extra virgin olive oil.
  • Arrange the ricotta on a serving dish, add the broccoletti and the meat roll with its sauce.
