Homemade pasta with herbs and hare

Ingredients

G 400 home-made pasta

G 300 hare meat

G 20 onion

G 50 bacon

N 1 anchovy

G 10 Brandy

G 100 boiled and dried herbs

G 100 butter

Thyme, Rosemary and Sage

N ½ Lemon

Salt and Black pepper to taste

Preparation

Heat extra-virgin olive oil in a saucepan and cook chopped onion.

Add hare meat and bacon pounded with knife, anchovy and let cook well.

Add Brandy and let evaporate then, add the chopped herbs. Season with salt and pepper.

Roll out the dough and form the tortelli.

Cook the tortelli in plenty of boiling salted water.

Melt the butter in a pan, add a pinch of salt and toss the tortelli (previously drained) together with the chopped herbs and lemon.
