Ginger-lime chamois meat skewers with fava beans and Pecorino
4 chamois meat skewers
300 gr fresh fava beans
100 gr Pecorino
ginger to taste
grated bread flavoured with salvia, thyme, garlic, salt and pepper to taste
extra virgin olive oil to taste
Clean the fava beans, place them on a plate and sprinkle over them some flavoured grated bread.
Season the meat skewers with lemon zest and grated ginger, grill them on a high flame.
Transfer the grilled meat to a serving plate and top with some pecorino shavings and olive oil.
